Main Responsibilities

Delivering modern, creative and quality sushi/sashimi dishes to the Main House menu, in line with company culture and budget

leading, motivating and developing the teams, encouraging passion and enthusiasm

Take ownership of the kitchen, handling the business whilst delivering high quality dishes

Conduct regular training sessions to ensure that skills and knowledge remain at an optimum level

Cultivate a working partnership with the restaurant management team and the Head of Food & Beverage

Produce food that exceeds guest expectations in flavour, substance and presentation

Manage the kitchen in a disciplined, systematic, structured, rational way

Manage the due diligence of Health & Safety and Food Hygiene

Other general, every-day activities



Experience in managing a high-quality kitchen operation

Aware of food trends in the market

Ability to train people and lead with a hands-on manner

Focus on quality of delivery of food, strong attention to detail

Communication skills, ambitious and committed, with strong team-player skills.

Experience in a similar role, not necessarily as a sushi chef

Knowledge of using Japanese ingredients and cuisine



Fluent English


Must be already eligible to work in UK, YMS welcome
